Après une macération à froid sur les peaux pendant 5 jours, la fermentation se déroule en cuves inox à température contrôlée. Une fois la fermentation terminée, seul le vin de goutte est séparé des peaux et transféré dans des amphores de céramique de 900 litres. Après environ 3 mois de bâtonnage, le vin repose en amphore pendant 12 mois supplémentaires, pour un élevage en céramique d’au moins 15 mois au total.
